After a full day on the beach yesterday, I would treat day 3 like a "port day" and plan an excursion! One of my favorite things to do in a cruise port is a catamaran snorkeling excursion.
Island Time Sailing in Panama City Beach offers a 3 hour catamaran snorkeling cruise. The cruise leaves from the Treasure Island Marina (same as the Sea Screamer) and travels through St. Andrews Bay to Shell Island. They anchor in water that is about 5 ft deep, where you can snorkel, swim to the beach, or try paddle boarding.
After about an hour at Shell Island, the catamaran sails out into the Gulf of Mexico and often attracts dolphins. A full bar and restrooms are available onboard. Snorkeling gear is included. While they sell snacks, it's not quite a full lunch. So, you might want to pack sandwiches for your family depending upon the time of the sailing. You have a full kitchen at the Joy Coastal condo, which will make packing lunch easy.

After your catamaran excursion, head back to your home base and regroup. Maybe a dinner back at the condo is the right speed after your day on the water. If you don't feel like cooking, several local restaurants will deliver through meal delivery services.
If you're looking for something to do after dinner, watching the sunset from the beach is always amazing, and the onsite pools are open in the evening.
Maybe after a long day in the sun, you're just ready to turn in early. Go for it. You're on vacation and we won't tell a soul!
